Delete a Page or a Spread?

First, click directly on the page you want to remove from your book, then Right-click anywhere on the page, and from the pop-up menu that appears, choose Remove Page (as seen here). If you want to remove multiple pages, select them all first (while pressing-and-holding the Command [PC: Ctrl] key), and do the same thing.
